stRAWberry and apple cobbler (or pie)

My friends are always wondering how I can survive on an all raw diet, and my usual response is to make them one of my favorite raw desserts: cobbler.  These desserts are sooo simple to make and taste amazing, so their usually my go to desserts if I’m really looking to impress.  The best part is they look truly amazing and really let the fruit shine.  These recipes can pretty much be adapted for any fruit, but apple and strawberry are my favorite.

Ingredients

Filling:
* 5 medium apples, peeled or 1 lb of strawberries, sliced
* 1/4 cup of agave nectar (or just enough so that it coats your fruit)
* 1 teaspoon salt
* 1 tablespoon ground cinnamon
* 1 teaspoon vanilla extract
* powdered soy lecithin

Crust:
* 1 cup Almonds
* 1 cup Cashews
* 1 cup Walnuts
* 1 cup extra-soft Dates

Directions

In a large mixing bowl, mix the fruit, agave nectar, salt, cinammon, and vanilla.  Mix until all the spices are pretty well distributed throughout the fruit.  Cover the bowl with plate and leave it out for 4 to 5 hours.  Now take out your food processor and throw in all the nuts and dates.  Take it for a spin and you’ll end up with an almost doughy mix.  Now get back to your fruit mix, and you should notice that the fruit has a good sweat going, and there will be plenty of deliciously sweet fruit juice at the bottom.  Try some of this juice to make sure the taste is right, and add any of the spices accordingly.  Now slowly mix in soy lecithin 1 tablespoon at a time.  The lecithin will thicken the whole mix.  Continue adding lecithin until you get a nice, thick consistency.

To plate, either put the fruit in bowl and topp with the crumbly nut-crust or pat the nut-crust down on the bottom of a pie-pan and topp with fruit.  Simply delicious.

    where do you get your soy lecithin? I couldn’t find any :(
