curried vegetable wrap

I’ve been making my curry for several months now, and today was looking for a new way to present it for some friends of mine who haven’t eaten much raw food. I decided to go with something simple, but still amazing. It turned out to be real beautiful, with a taste to match. Even better, my meat-mainly friends loved it. Delicious.

Ingredients:

Curry:
* 2 tablespoons Honey
* 1 pinch of salt
* 1 tomatored chili powder (to taste)
* 1/2 Lemon juiced
* 1/4 cup Olive Oil
* 1 tablespoon Braggs Liquid Aminos
* 1 tablespoon Raw Apple Cider Vinegar
* 1 teaspoon Turmeric
* 1/2 teaspoon Cumin powder
* 1/2 teaspoon Coriander powder
* 1/2 teaspoon Asafoetida (available at Indian Markets)
* 1/2 teaspoon Paprika
* 2 handfuls Cashews

Wrap:
* 4 leaves of leafy lettuce
* 2 cups shredded carrots or pulp from carrot juice
* 1 cup walnut pieces

Preparation:

Put all ingredients for curry together into food processor and process until smooth. For each lettuce wrap, take one leaf, top with shredded carrots, then curry. Add on tomatoes, then walnut pieces. Easy!

    My husband made this tonight for dinner and it is DELICIOUS! He said, “It really DOES taste like curry. This is the kind of food you serve to your nonraw friends to introduce them to raw.”

    We made it again tonight, and this time I added shredded cabbage to the carrots. I also used twice as much lemon juice (accidentally) and it was STILL delicious!

    I just wanted to say, that from a glance at your blog (and it was just a quick glance) it seems like raw foods don't have to be intimidating or complicated.
    I am actually willing to try this, because it looks so simple.

    I made these tonight and they were easy, quick and tasty! I did not have the asafoetida so I just skipped it. Thanks for this recipe.

    One thing though, in the recipe, the third line is confusing (1 tomato and red chili powder are all kind of run together). SO — I did not put any tomato in the curry sauce, but used it in the “toppings”. Is that what you intended? Regardless, it was SO good!
