<p>For the salad:</p>
<p>1 cup Large carrot (shredded or grated)<br />
2 cups shredded cabbage<br />
1/2 cup julienne apple<br />
3/4 cup julienne cucumber<br />
1/2 cup basil leaves<br />
2 tablespoons chopped mint</p>
<p>For the dressing:</p>
<p>1 young coconut (use just the flesh of the coconut and cream in blender/food processor)<br />
1/4 cup soy sauce<br />
1/8 cup lemon juice<br />
1/8 cup agave<br />
2 teaspoons ginger<br />
Cilantro as a garnish<br />
When you&#8217;re ready to eat. Toss the salad and dressing together. You can also add roasted peanuts if you like.</p>

<p>Since we&#8217;ve started putting out all our indian recipes, I&#8217;ve seen a lot of other chefs coming up with some really great Indian recipes.  I just found these two great recipes on the <a href="http://rawgastronomy.blogspot.com/" target="_blank">Raw Gastronomy</a>.  I haven&#8217;t actually had a chance to try them out myself, but from the ingredients and the pictures, I get a good feeling.  Try them out, and tell us what you think.</p>

			<content:encoded><![CDATA[<p>Over the Thanksgiving weekend, the whole family headed out to Arizona for a small vacation.  We first stayed one night at the Mago Retreat (http://sedonamagoretreat.org), a cool little meditation resort/center way out in a place I like to call the Middle of Nowhere.  It was literally took one hour to cover the dirt road leading up to the retreat.  At Mago, we all did a little meditation and yoga, and then took a short hike up to the nearest plateau.  The next day we headed out for the center of Sedona.  There, we drove around for a bit admiring the scenery, and then we stopped for a great raw meal at D&#8217;lish Vegetarian Restaurant (http://dlishsedona.com).  Sadly, we forgot to take pictures of the food.  From there it was on to the Grand Canyon.  The Canyon was truly an amazing sight, and all of us really enjoyed it.  Ro and I are planning a hiking trip through there around spring now.  Another 9 hrs of driving and we were back home in LA.  It was a great little trip, and I would definitely recommend a trip out there.</p>

<strong>1. Coal still accounts for 52% of all American electricity consumption. </strong>Americans still burn 1 Billion tons of coal per year. The average American household uses 9.5 tons of coal per year for energy. About half of all the trains on American railways at any given time are carrying coal. Most Americans don&#8217;t know that coal is still being used because it is burned far away from residential areas. The truth is that we are still overly dependent on coal power.</p>
<p><strong>2. Clean Coal is a myth perpetuated by the Coal industry. In actuality, it is not scientifically or economically feasible.</strong> In the summer of 2007, America&#8217;s coal companies, railroads, and utilities, launched a major advertising campaign promoting the concept of clean coal. Clean Coal uses a process called the Integrated Gas Combined Cycle (IGCC) to &#8220;capture&#8221; the CO2 from coal and turn it into a cleaner burning gas. The captured CO2 is then injected into water deep in the ground. <em>The reality is that this technology is simply a ploy from the coal industry to perpetuate its own existence and maintain profit.</em> The science of capturing CO2 from Coal is still only theoretical. Scientists are not even sure if injecting CO2 into the ground could ever be safe. It makes no sense to invest in the research and massive infrastructure for capturing CO2 when we could simply use renewable energy sources.</p>
<p><strong>3. Both John McCain AND President-elect Obama have publicly come out in favor of Clean Coal.</strong> The arm of the coal lobby is so strong that neither candidate could speak against Clean Coal. Swing states like Indiana and Ohio are heavily dependent on coal and highly involved with the coal industry. If we don&#8217;t raise awareness on this issue, its going to go on unaddressed. Change has to occur from the goverment level on this issue. Hopefully Obama flip flops on this one.</p>

<p>Today I&#8217;m writing about an issue I&#8217;m very concerned about. It&#8217;s also an issue that I&#8217;m unsure about. <strong>WATER</strong></p>

<p>As many of you may have heard, scientists have discovered all types of medical waste, drugs, toxins, and chemicals in tap water. This has prompted many people to start buying bottled water because they believe it&#8217;s cleaner. Guess what? Not really.</p>
<p>The Environmental Working Group recently analyzed samples from 10 major bottled water companies. They found the same contaminants in the water that caused the ruckus over tap water&#8211;disinfection products, caffeine, Tylenol, nitrate, industrial chemicals, arsenic and bacteria were detected. Pretty nasty stuff. </p>
<p>I could have predicted this, but yes, bottled water is no better than tap. It&#8217;s just more expensive. </p>
<p>But like I said, this is an issue that I&#8217;m unsure about how to approach. It&#8217;s <strong>very</strong> difficult to be particular about the water you drink. On top of that, there&#8217;s all these conflicting theories over which water is best&#8211;some say distilled, some say RAIN water. Sometimes food issues like this are so large and so widespread that the only way we can address them is through policy. Something needs to be done at a high-level with this problem. Until then, be mindful that you&#8217;re probably not getting what you&#8217;re paying for when you buy bottled water&#8230;</p>
